Water Based Cooking
There are essentially two different ways that Suvie heats up. The first way is with Suvie's internal water jacket, which continuously circulates water throughout the appliance, delivering constant, steady temperature throughout; this function is utilized for Sous Vide Mode, Slow Cook Mode, Reheating, and Proofing.
Broiler Based Cooking
The other method is with Suvie's powerful quartz heating elements. With this method, each zone has an upper and a lower heating element that toggles off and on depending on the temperature, mode, and time that you set; this function is utilized for Broil, Bake, and Roast Modes.

Any modes that use the same basic heating function can be used at the same time, so any modes that use water circulation (Slow Cook, Sous Vide, Reheating, and Proofing) or any modes that use the quartz heating elements (Roast, Broil, Bake).
